I had a go at making some chocolate cupcakes and also some banana muffins. The banana muffins came out really good and went down really well at my family Christmas party this year. BUT the chocolate muffins/cupcakes were a very different story!
I think this is a lesson in sticking to the recipe, because when I had made up my cake mix, I thought it looked too runny. To solve this, I figured it would be a good idea to add a bit more flour. At first, everything looked fine and the cakes started to rise nicely, but then all of a sudden, there was oozing, overflowing, bubbling goo everywhere, and my chocolate cupcakes looked like something from a 1950s B-movie horror, as you can see in this photo.
So, the moral of this story is, if there is a recipe, it’s likely that someone has tested it out before publishing it anywhere, and you shouldn’t assume you know better!

hahaha love the fun picture you included. I’ve also made the mistake of adding too much flour, but never under the assumption that I knew better. I just basically stink in the kitchen.
I don’t know that adding more flour would have caused the bubble over… Maybe putting the cupcake liners in a cupcake/muffin pan would add some more support?
