This mint chocolate cupcake recipe video from Dishin’ With Di, with its buttercream icing and mint-chocolatey goodness, is a great treat for St. Patrick’s Day.
Our craftfailing friend Tamara of Confessions of a part-time working mom agreed, so she attempted to make cupcakes again despite her experience with strawberry yuck-cakes and the fact that one of the most important ingredients—peppermint extract—isn’t even available where she lives. Determined her cakes needed to be mint-tacular, she ordered the extract from overseas.
“Can you say ‘shipping and handling’ even for a tiny little bottle?” she says. Hopefully her dedication and effort paid off!
“Totally deflated,” she continues. “They did taste delicious, though. What to do?”
Well, much like her fail-fix with those strawberry cupcakes, Tamara got resourceful. “I squished them, added melted butter and graham cracker crumbs (another hard to find item around here. A friend had brought me this box from Florida) and made some cheesecake crust.”
“The rest is history. I called them cheesecake bites and took them to the office.”
And how were the reviews? The response from the coworker reported to be the harshest food critic was, “Why are those suckers so tiny, next time, make a REAL cake, K?” Sounds like a win!
