I’m not a huge fan of pineapples, but I am a huge fan of cakes that aren’t ruined when you accidentally flip them upside-down since I’m fairly likely to drop things awkwardly in the kitchen. That makes pineapple upside-down cake something I probably COULD make, but I don’t because the whole pineapple dessert thing reminds me of fruit floating inside a 1970’s Jell-O mold and nothankyou I’ll just skip dessert.
The food magician at Pretty. Simple. Sweet. has outdone herself, though, with this Caramel Banana Upside-Down Cake because A) no pineapple B) CARAMEL C) I can still flip it upside-down on purpose to shake the %&@$ thing out of the pan, and D) DID I MENTION CARAMEL?

Oh, um, except for the part where the cake was flipped upside-down… onto the floor…? And possibly run over by the vacuum? I’m just kidding, I’m sure it just had a tough time coming loose from the pan; and maybe that dark color comes from an improvised chocolate sauce? If so, BRAVO! If not… oh well, I’m sure crumbly burned brown bananas are still better than pineapples!
